Our Food: Connie DeSousa (Top Chef Canada Finalist) and John Jackson are the chef-owners who work with authentic tools of the trade, including a custom-built rotisserie, charbroiler and vintage-style slicer, with ingredients sourced from small, local artisan farmers and Alberta ranchers.
