Assistant Manager/ Sommelier

Position summary

The Assistant Manager/ Sommelier will work closely with the General Manager, assuming the role of the General Manager in their absence which includes orchestrating service within the company’s specified standards and guidelines. This person must be a subject-matter-expert in regards to each FOH position, being able to ‘assume’ any role at any time. In addition to the service responsibilities, the Assistant Manager/ Sommelier will be solely responsible for managing the bar team, overseeing the beverage program as well as developing Edible Canada's seasonal wine and beer lists. This person will be experienced with cocktails and has an extensive knowledge of beer, wine and spirits which they share with all FOH staff through training sessions. They will be responsible for meeting beverage targets for the bistro and implementing initiatives to make sure that targets are continuously achieved.

The Assistant Manager/ Sommelier will also be responsible for overseeing the monthly liquor inventory count, making sure that FOH invoices are input into the specified software, and that weekly bar orders are completed. Attention to detail, keen leadership ability, and a passion for food and wine are essential characteristics to this role.

Key Accountabilities

Ensure that we are optimizing seating at all times during service.
Address any guest concerns as they come up and decide on preventive or corrective action. Communicate with F&B Director regarding guests which require follow up. Ensure F&B Director is made aware of any serious guest concerns as soon as possible.
Attend weekly Bistro Leadership Team meetings.
Monitor consistency in service and food standards, be comfortable addressing concerns with the Chef.
Ensure cleanliness standards of the restaurant are met based on the guidelines detailed in the Cleanliness Standards document.
Create appropriate service ambience, with focus on music volume, lighting levels, and ambient temperature.
Assist in constructing beverage and wine program with an emphasis on Canadian products
Involved in ordering all beverage and maintaining relationships with beer/wine/liquor reps
Ownership of all internal communication between bartenders
Organize all beverage launches and necessary training around them
Liaise with kitchen management in relation to product ordered through kitchen suppliers
Responsible for monitoring bar opening and closing duties are carried out by the bar team
Responsible for monitoring bar weekly cleaning duties are carried out by bar team
Maintain bar cleanliness standards as indicated in the Service Guidelines and organize deep cleans of the bar area
Oversee ordering of all non alcoholic beverage items including pop, juice and dairy and coffee.
Maintain stock on wine wall
Accountable for ensuring bartenders are trained fully in the position
Training and ongoing development of FOH staff on the beverage program

Requirements

2 + years’ as a Restaurant Manager in a casual fine dining restaurant
2 + years managing an entire beverage program
WSET Level 3 or higher
Knowledge of beer and spirits from prior experience or education
Experience using Touch POS system or similar
Experience using Open Table Reservation System or similar
Excellent organizational and time management skills
Strong written and verbal communication skills
Strong passion for local food and wine
