Position Summary

The Pastry Cook is responsible for producing high-quality desserts and pastry components according to the Executive Chef’s standards. This role requires excellent attention to detail, consistency, and the ability to follow precise recipes while maintaining a clean, efficient, and organized workstation.

Key Responsibilities
Production & Execution

Prepare and execute all pastry items including mousses, gels, cakes, tarts, custards, pâte à choux, ice creams/sorbets, and modernist components.

Assemble and plate desserts during service with speed, precision, and consistency.

Maintain strict adherence to recipes, portioning, and presentation standards.

Support R&D development for new seasonal desserts with the Executive Chef.

Quality & Standards

Uphold House of Dawn’s fine-dining dessert standards (texture, balance, sweetness control, temperature, plating).

Conduct daily quality checks on mise en place, ensuring freshness and optimal condition.

Follow all food safety and sanitation guidelines, including proper labeling, storage, and rotation (FIFO).

Operations & Organization

Maintain an organized pastry station and assist in general cleaning tasks.

Communicate prep needs, shortages, or equipment issues in a timely manner.

Assist with private events, special menus, and chef collaborations as required.

Requirements
Skills & Experience

1–3 years of pastry experience in a professional kitchen; fine-dining experience preferred.

Strong technical foundation in classical pastry and familiarity with modern techniques (gelatin, pectin, gellan, hydrocolloids, tempering, smoking, dehydration, etc.).

Excellent knife skills and precision.

Ability to work efficiently during high-volume service.

Schedule & Compensation

Full-time position with evening and weekend shifts.

Competitive hourly wage based on experience + staff meals + tip-out eligibility.
