JOB SUMMARY

 

As a server, you will act as a conduit for our guests appetite, connecting their taste buds with our beverage & food offerings creating an unremarkable dining experience. You are part of a bigger production within the B&F team, ready to shine a spotlight on every dish. Our guests rely on your expertise, so you are able to articulate exactly what our guests can anticipate with each dish/beverage offering. You lead each conversation with confidence, capturing your audience with your electric persona and charismatic energy. Under pressure, you keep cool, attending to each of your guests needs without compromising your attention to detail. As a result, they keep coming back for more!     

 

PRIMARY DUTIES & RESPONSIBILITIES

General Food and Beverage Services

  •  Perform table side specialty meal finishes including but not limited to, flambe of sauces, dessert, and food, slicing of meat, and garnishing
  •  Uniquely present activation dishes including the use of blow torches, mallets, smoke machines, squeeze bottles, strainers, knives, slicing techniques, sifting.
  •  Participate (in varying degrees) in venue activations including live musical performance, drag show performance, dance performances, nightly DJ sets, themed wardrobe etc..  
  •  Articulate menu items and pairings, beverage pairings, and upsell recommendations to guests based on pallet preferences.
  • Articulate the preparation techniques used for dishes including origin of ingredients and locally sourced partnerships and history.
  • Maintain cleanliness of work areas throughout the day, practicing clean-as-you-go procedures.Inspect the cleanliness and presentation all china, glass, and silver prior to use
  • Set tables according to type of event and service standards, including types of linens, glassware, plate/chinaware, and silver/flatware, ensuring all supplies meet quality standards.
  • Check in with guests to ensure satisfaction with each food course and/or beverages.
  • Communicate additional meal requirements, allergies, dietary needs, and special requests to the kitchen.
  • Follow appropriate procedures for serving alcohol beverages (SMART SERVE)
  • Present physical and accurate check and process payment, adhering to all cash handling and credit policies/procedures including added and received gratuity

 

Wine Service

  • Ability to articulate knowledge of wine pairings and offerings including aperitifs and dessert wine.
  •  Ability to articulate knowledge of wine characteristics such as Sweetness, Acidity, Tannin, Alcohol, Body, Aroma, Terroir, and Region.
  •  Ability to recommend upsell appropriate premium wine pairings and consistently meet beverage upselling goals.
  •  Ability to professionally present wine in front of guests table side which in includes uncorking, use of Stelvin closure, decanting, and use of proper pouring techniques.
  •  Ability to demonstrate knowledge of wine serving glassware and choose appropriately according to specific type of wine

 

Guest Relations

  •  Welcome and acknowledge each and every guest with a smile, eye contact, and a friendly verbal greeting, using the guest's name every time.
  •  Engage with guests in conversation regarding their stay, property services, and area attractions/offerings
  •  Actively listen and respond positively to guest questions, concerns, and requests using brand or property specific process to resolve issues, delight, and build trust.
  • Anticipate guests' service needs, including asking questions of guests to better understand their needs and watching/listening to guest preferences and acting on them whenever possible.
  • Address guests' service needs in a professional, positive, and timely manner.
  • Provide assistance to individuals with disabilities, including assisting visually, hearing, or physically-impaired individuals within guidelines (e.g., escorting them when requested, using words to explain actions, writing directions on paper, moving objects out of the way, or offering access to Braille or TDD phones).
  • Assist other employees to ensure proper coverage and prompt guest service.
  • Thank every guest upon departure, invite them to return, and wish them a fond farewell. 

 

Closing

  • Complete closing duties, including storing all reusable goods, breaking down goods, cleaning all equipment and areas, returning equipment to proper locations, locking refrigerators, restocking items, turning off lights, locking doors, and completing daily cleaning checklist. .

CRITICAL TASKS

Safety and Security

  • Report work related accidents, or other injuries immediately upon occurrence to manager/supervisor.
  •  Follow company and department safety and security policies and procedures to ensure a clean, safe, and secure environment.
  • Identify and correct unsafe work procedures or conditions and/or report them to management and security/safety personnel.
  •  Use proper equipment, wear appropriate personal protective clothing (PPE), and employ correct lifting procedures, as necessary, to avoid injury.
  •  Follow property specific procedures for handling emergency situations (e.g., evacuations, medical emergencies, natural disasters).
  •  Follow policies and procedures for the safe operation and storage of tools, equipment, and machines.
  •  Complete appropriate safety training and certifications to perform work tasks.

 

Policies and Procedures

  •  Protect the privacy and security of guests and coworkers.
  •  Follow company and department policies and procedures.
  •  Ensure uniform, nametags, and personal appearance are clean, hygienic, professional and in compliance with company policies and procedures.
  •  Maintain confidentiality of proprietary materials and information.
  •  Protect company tools, equipment, machines, or other assets in accordance with company policies and procedures.
  •  Perform other reasonable job duties as requested by Supervisors.

 

Communication

  •  Speak to guests and co-workers using clear, appropriate and professional language.
  •  Discuss work topics, activities, or problems with coworkers, supervisors, or managers discreetly and quietly, avoiding public areas of the property.
  •  Communicate with guests, other employees, or departments to ensure guest needs are met.

 

Cash/Bank Handling

  •  Record transaction in MICROS system at time of order.
  •  Balance cash float nightly ensuring debit/credit reports are completed with zero variance. 
  •  Use of basic arithmetic to calculate and split bills as per guest requests.

 

MINIMUM QUALIFICATIONS & REQUIREMENTS

Experience & Certification

  • SMARTSERVE certified
  • Food Handler Certification
  • +3 years serving experience in a fast paced, dynamic, elevated (high-end) dinner service a la cart restaurant environment. Previous experience should be relevant and recent.
  • Previous experience using POS system (Micros), cash handling, debit/credit card processing terminals.
  • Previous experience using suggestive selling techniques in order to increase revenue and average checks.
  • Previous experience in a selling environment where individual targeted sales goals are met consistently.

 

Physical Demands

  •  Read and visually verify information in a variety of formats (e.g., small print).
  •  Ability to constantly stand for the duration of an entire work shift.
  •  Walking for an extended period of time.
  •  The use of sensory demands (hearing, speech) in an environment that requires exposure to medium level of noise.
  •  Grasp, turn, and manipulate objects of varying size and weight, requiring fine motor skills and hand-eye coordination.
  •  Move through narrow, confined, or elevated spaces.
  •  Move over sloping, uneven, or slippery surfaces.
  •  Move up and down stairs and/or service ramps.
