THE OPPORTUNITY

Published On Main is currently searching for a passionate individual to join our growing team as Chef de Partie.

START DATE: Immediately

This position is FULL TIME

OVERVIEW

As a Chef de Partie (CDP) you will be pivotal in the execution of our menu and the management of a specific kitchen section. As a CDP, you will demonstrate culinary expertise, efficient station management, and be an advocate for our collaborative kitchen culture.

RESPONSIBILITIES

Menu Execution & Culinary Management

- Deliver exceptional execution of the menu, maintaining the highest standards for each dish produced in your section.
- Take full ownership of your section's mise en place, ensuring all ingredients are prepped and ready for service.

Inventory & Stock Management

- Manage stock levels within your section, conducting inventory checks, and ordering supplies to meet service needs without surplus or deficit.
- Apply principles of stock rotation and conservation to reduce waste and maintain cost-efficiency.

Hygiene & Cleanliness

- Uphold the cleanliness of your section, adhering to health and safety standards meticulously.
- Ensure all equipment and tools are kept in excellent condition and observe strict sanitation practices.

Operational Efficiency

- Assist in optimizing kitchen workflows and processes to ensure your section runs efficiently.
- Actively participate in team meetings to discuss improvements and solutions to operational challenges.

Compliance & Safety

- Adhere to all restaurant policies, procedures, and culinary standards, ensuring compliance with local health and safety regulations.
- Engage in ongoing professional development to stay current with culinary techniques and safety protocols.

CULTURE & ENGAGEMENT

- Promote and contribute to a positive, inclusive work environment.
- Provide support in the training and development of junior team members and contribute to the seamless integration of new staff into the kitchen operations.

3-5+ years prior experience working in a high caliber kitchen and a solid understanding of the expectations and standards associated with these establishments, including attention to detail, presentation, and high-quality food production.
The ability to work under pressure, efficiently maintaining quality in a fast-paced and demanding environment, especially during peak hours.
A good understanding of the restaurant's menu, including the ingredients, flavour profiles, and cooking techniques often used and the skill to execute dishes and recipes accurately.
A keen eye for detail, ensuring that every menu item or dish component they work on meets the highest standards.
The confidence to adapt quickly, think on their feet, and handle unexpected situations such as changing menu items, last-minute requests, or special dietary restrictions.
Effective communication and teamwork skills and the ability to collaborate with team members, and work harmoniously in a fast-paced, high-stress environment.
