Job Description

From the team that brought you aware winning cocktail bar 'Laowai' (Canada's nest new bar - Canada's top 100), We are hiring for a new and exciting concept in historic Chinatown.

This concept will offer a unique experience and we are seeking talented and passionate hospitality individuals to join our opening team.

Kitchen Manager

Scope of the job:
The Kitchen Manager is responsible for all daily operations in the kitchen, as well as assisting the Production Supervisor on inventory management, production, and waste management. They will report directly to the Executive Chef while offering their own hands-on approach to running the kitchen and daily systems.

Key Responsibilities:
-Responsible for smooth operation of the kitchen and help cover other stations during service and production time
-Responsible for maintaining proper line set and mise en place levels, including chemical and cleaning supplies
-Responsible for maintaining proper FIFO rotation and organization of products
-Prepare food including butchering of raw products, cooking of all dishes and cooking methods, sautéing, grilling, roasting, frying, baking, steaming, braising, smoking, etc.
-Maintain food safety, quality, cooler and freezer organization, and all kitchen standards set by the Executive Chef
-Work closely with team members and train and instruct on proper food handling, cooking, and plating procedures
-Assist with menu and recipe developments and execution
-Supervise kitchen members and promote a safe, inviting work environment
-Operate and maintain all department equipments and report of any malfunctioning
-Assist with inventory management and counts
-Report food wastes, equipment malfunctioning, staff concerns, and quality issues to the Executive Chef

Qualifications, Knowledge, Skills and Abilities Required
-3-5 years’ experience in professional cooking required
-Valid Food Safe certificate required
-Desire to improve and learn on a daily basis
-Able to lift up to 25kg
-Superior organizational skills with the ability to multi-task
-Understanding of inventory management and maintaining daily par lists
-Must be personable, friendly, and outgoing
-High energy and strong work ethic
-Ability to handle high-stress situations
-Must be able to work and communicate effectively with FOH department to ensure a good -work culture
