Roger Ma, Executive Chef at Vancouver's acclaimed Boulevard Kitchen & Oyster Bar, won Gold last weekend at the Canadian Culinary Championship 2020 in Ottawa.
Chef Ma's dish, called BC Coastal Terroir, showcased a single honey mussel gratineed with a miso butter crust, foraged bull kelp, sea urchin custard, a slice of Yukon potato and scallion terrine set in a gelee of clam and mussel nectar.
Montreal's Chef Marc-André Jetté of Hoogan et Beaufort won SIlver and Winnipeg's Chef Emily Butcher of deer + almond was awarded Bronze in the competition.
Featuring over 100 chefs from coast to coast, the Canadian Culinary Championships is the grand finale of Canada’s Great Kitchen Party, a series of events aimed at "elevating and celebrating Canadian excellence in food, music and sport."
In a move that was endorsed by charities like the Heart & Stroke foundation, The B.C government removed the tax exemption on soda drinks.
A group of bars received a special extension to stay open two hours later February 14 to 16.
British Columbia and Ontario restaurants will no longer sell Beyond Meat breakfast sandwiches, ending partnership due to lack of demand.
