Job Description

A leader in elevated dining experiences & events, Locale Restaurants/Bars are well established in York Region as both vibrant neighbourhood gems and destination hotspots.

The Opportunity

Entering an active transition & growth phase, Locale Aurora is hiring for a new position of Chef de Cuisin and is  seeking a culinary leader who will define the next chapter for that location.

In this role you will manage and lead the BOH team and oversee daily operations of a professional, high volume, quality focused scratch kitchen.

Culinary:

  • To execute Italian-inspired dishes for menu development, features and seasonal updates, using proper ingredients and cooking methods and ensure consistent, clean, modern, plating style that highlights ingredients and best reflects the brand.
  • You will have the opportunity and autonomy to elevate and influence the culinary direction as you advance and integrate into the role.

Operations:

  • Manage BOH scheduling to ensure labor targets and team satisfaction are met without compromising kitchen standards.·
  • Manage food costs, inventory levels, ordering accuracy, and waste control.·
  • Delegating tasks and responsibilities to core team with oversight.·
  • Implementing a strict cleaning schedule and enforce food safety, sanitation, temperature controls and keep a safe inspection-ready kitchen.
  • Ensure the FIFO system is followed for inventory and proper food storage

Collaboration & Communication:·

  • Maintain regular and effective communication with FOH & event managers 
  • Conduct productive pre shift briefings and new menu tastings with FOH team.
  • Keep clear constructive notes, topics for discussion to present at manager meetings.
  • Check in regularly with your BOH team to invite feedback, address concerns, highlight achievements, present challenges, assign new tasks to create learning opportunities

Requirements

  • 3+ years experience as a CDC / Senior sous / Chef / manager of a full-service, high-volume scratch kitchen
  • Experience with Italian ingredients and understanding of flavor profiles
  • Proven ability to manage scheduling, inventory, maintain food & labour cost, menu development
  • Food Handler Certification
  • Physically able and have Flexible availability to work 48-50 hrs/ week (days, evenings, weekends, holidays)
  • Must be legally eligible to work in Canada
  • Must have reliable form of transportation to commute to Aurora

Compensation

$70,000/yr to start - plus gratuity share
