Sushi Chef / Menu Development Consultant
Restaurant is seeking an experienced sushi chef or sushi menu-development consultant to assist with the creation and launch of a new sushi program.
Scope of Work
The selected chef or consultant will work directly with ownership to develop a focused, profitable, and operationally practical opening sushi menu.
Responsibilities and deliverables may include:
- Opening menu recommendations
- Recipe development
- Standardized recipe and product specifications
- Ingredient and portioning standards
- Prep lists and production requirements
- Rolling, cutting, plating, and build instructions
- Demonstrations of preparation and presentation techniques
- Photos or visual examples of completed menu items
- Guidance on sushi-specific ingredients, tools, and equipment
- Assistance identifying and sourcing appropriate products and vendors
- Recommendations for storage, preparation, and service workflow
- Sushi-specific food-handling guidance
- Training and demonstration support for the restaurant team, where required
- Vendor Sourcing
The menu must be visually appealing, profitable, efficient to prepare, and capable of being executed consistently by a trained kitchen team.
Ideal Candidate
Candidates should have:
- Professional sushi preparation experience – this is not for beginners.
- Strong knowledge of sushi rice, ingredients, rolling, cutting, portioning, and presentation
- Experience developing recipes, menus, or standardized kitchen specifications
- An understanding of food cost, yields, waste reduction, and menu profitability
- Strong visual presentation standards
- The ability to teach and demonstrate sushi techniques clearly
- The ability to design a program that can be executed consistently by any cook
- Reliable communication and a collaborative, professional approach
Experience launching a sushi program, consulting for restaurants, developing menus, or training kitchen teams would be a strong asset.
Compensation
$25–$35 per hour, depending on experience.
