Barnacle is the raw bar concept inside Time Out Market Vancouver, and we're looking for a skilled oyster shucker to join the team. If you're fast, clean, and genuinely love the culture around raw bars and shellfish, keep reading.
What you'll be doing
- Shucking oysters to order at high volume, consistently and safely
- Maintaining the raw bar display: ice, presentation, rotation, freshness
- Working directly with guests, explaining selections and making recommendations
- Keeping your station clean, organized, and compliant with food safety standards
- Receiving and inspecting shellfish deliveries, flagging anything that doesn't meet spec
- Collaborating with kitchen and FOH teams in a busy market environment
What we're looking for
- Proven experience shucking oysters in a professional kitchen or raw bar setting -- this is not an entry-level role
- Speed and precision: you can hold your own during a dinner rush without sacrificing presentation
- A genuine appreciation for oyster culture -- the provenance, the ritual, the conversation around it
- Solid knowledge of shellfish varieties, sourcing, and quality indicators
- Valid FoodSafe Level 1 certification (or equivalent)
- A positive attitude and team-first mentality -- we work closely together and the vibe matters
