Capo & The Spritz is Yaletown's sun-soaked modern trattoria — a communal, spritz-forward Italian dining room that's loud, lively, and built to last. We cook generous, shareable Italian food that guests crave and come back for. We're looking for an AM Cook who sets the tone for the whole day — the first one in, building the foundation everyone else cooks off of.

Shift: 7:00am – 3:00pm

What You'll Do

• Open the kitchen and get the line ready to fire — stations stocked, sharp, and spec'd out before service hits
• Execute daily prep: sauces, doughs, stocks, antipasti components, and mise en place for pasta and small plates
• Break down deliveries, rotate product, and keep walk-ins and dry storage organized and labeled
• Maintain consistency and portion control on everything you prep — the PM team should never have to guess or redo your work
• Keep your station immaculate — cleanliness isn't an afterthought, it's the job
• Hand off a clean, organized kitchen to the next shift with clear communication on what's ready and what needs attention
• Jump in wherever needed — this is a team kitchen, not a solo act

What We're Looking For

• 1–2+ years of prep or line experience in a fast-paced, quality-driven kitchen
• Someone who works clean, works fast, and doesn't need to be told twice
• Strong knife skills and real comfort with volume prep
• Self-starter who can run the early shift with minimal oversight
• Comfort with Italian cuisine is a bonus — passion for food is non-negotiable
• Reliable, on time, and ready to work — every shift, no exceptions
