They had nearly two years to develop Folietta into an idea that could have been great, a flag-bearer for the revitalization of Vancouver's oldest Italian neighbourhood. What they came up with instead was an incoherent hodgepodge of inspirations, with no respect for the ingredients at the heart of Italian cusine. "Handmade" pasta overcooked and extruded, olive oil cut with canola to save money, geoduck in a Vongole, etc. As a manager, you're stuck between a rock and a hard place, constantly navigating inexperienced service staff on the one hand and the unrealistic expectations of overpaid executives on the other. It's a great place to work if your goal is to ascend quickly. The turnover at this company is so high that you'll likely be offered a promotion within three months.
