Job Description

Position Overview

Ju-Raku is seeking a skilled and passionate Sushi Chef to join our culinary team. The ideal candidate has strong experience in sushi preparation, knife skills, and seafood handling, with a commitment to quality, consistency, and presentation. As a Sushi Chef at Ju-Raku, you will work closely with our team to deliver an exceptional Japanese dining experience using premium ingredients and traditional techniques.

Duties & Responsibilities

• Prepare sushi, sashimi, maki, and other Japanese dishes according to restaurant standards
• Maintain high standards of food quality, presentation, and consistency
• Ensure proper handling, storage, and preparation of seafood and ingredients
• Maintain cleanliness and organization of the sushi station and kitchen area
• Monitor inventory and assist with ordering and ingredient preparation
• Follow all food safety, sanitation, and health regulations
• Work collaboratively with kitchen and service teams to ensure smooth service
• Assist with daily prep work including fish breakdown, rice preparation, and garnish preparation

Qualifications

• Previous experience as a Sushi Chef or Sushi Cook in a Japanese restaurant
• Strong knife skills and knowledge of fish preparation and sushi techniques
• Understanding of food safety and sanitation standards
• Ability to work in a fast-paced environment while maintaining attention to detail
• Team-oriented with strong communication skills
• Ability to work flexible hours, including evenings, weekends, and holidays
• Passion for Japanese cuisine and hospitality
