CIBO Wine Bar at King Street is currently looking for a highly motivated individual as a Garde Manger.
The Garde Manger oversees the culinary operations by following the restaurant standards and procedures. Responsible for managing the food production and quality control for all the food items prepared in the cold kitchen.
Other tasks include:
-Oversee the consistency of various preparations within the cold kitchen to ensure quality product and adherence to standard recipes.
-Prepares all cold food according to recipes, guidelines and standards set by the Executive Chef or according to restaurant standards.
- Utilizes various kitchen utensils and equipment in safe and efficient manner.
- Places food items in appropriate cooking pans and cooks according to menu requests.
- Portions food products according to established portion control guidelines.
- Always keep all refrigeration, equipment, storage and working areas in clean, working condition in order to comply with health department regulations.
Qualifications:
- Minimum 2 years of related kitchen experience
- Culinary school is an asset
- Must be punctual, with a clean uniform and have a positive attitude (one team one dream)
- Able to meet and maintain standards set by the Chef
- Must be able to communicate well
- Able to multitask and pay attention to details
- Able to prep and set own station daily on time for service following recipes and kitchen standards set by Chef
- Demonstrates sense of urgency in completing daily tasks and maintain composure under pressure
- Must be able to legally work in Canada
