The Company
Frankie's Italian is a premium casual restaurant delivering authentic Italian dishes in a modern setting in the heart of the stadium/theatre district. Our services include daily breakfast, lunch, dinner, room service and catering along with our adjoining renowned jazz club that offers live music featuring local and international musicians. We are looking for an experienced Sous Chef to assist our Head Chef in executing the production and execution of our home made Italian cuisine
Job Summary
• Assisting the Head Chef in leading the preparation and execution of all core and seasonal menus
• Schedule and supervise a large, diverse kitchen team of up to 20 team members
• Perform weekly inventory counts and reconciliations
• Train, develop and mentor our CDPs, CCs, Stewards and junior staff members
• Maintain, uphold strict sanitation and food safety handling procedures
• Support the Chef in administrative respomsibilities: scheduling, invoice reconcilliation, inventory system management, recruitment
Qualifications
• Minimum 5 years progressive, high volume kitchen experience in a similar leadership role
• Possess organizational and leadership skills for managing and delegating a diverse staff and their duties
• Valid Food Safe certification or provincial equivalent
• Ability to manage with a high level of attention to detail and efficiency
• Availability includes working evenings, weekends and holidays
• Only individuals legally permitted to work in Canada at the time of application will be considered for this position.
• Maintains strong computer skills, including Windows. R365 knowledge an asset
