Job Description

WHO WE ARE: The Vancouver Club is a distinguished private members club nestled in downtown Vancouver. Established in 1893, the Club has a rich history and a commitment to exceptional service offering an array of amenities, including dining, function spaces, accommodations, and fitness facilities.

We are seeking a dynamic and experienced Chef de cuisine to join the team. This is a hands-on role for a leader who thrives in a collaborative environment and is passionate about delivering outstanding service.

POSITION SUMMARY The Chef de cuisine is responsible for providing overall leadership, creative development and quality assurance of The Vancouver Club’s culinary operations. This includes directing product conceptualization, menu engineering, recipe development, item costing, concept testing, and product specification development/sourcing, implementation of new menus and on-going quality assurance processes and systems.  Overseeing the morale and training of the Kitchen team to ensure that Vancouver Club Standards are always being met.

Reporting to the Executive Chef, responsibilities and essential job functions include but are not limited to the following:

KEY RESPONSIBILITIES

Provides a respectful working environment for all members of the Vancouver Club staff at all times,  ensures that the culinary team is aware and follows all club policies.
Overseeing the kitchen team in all aspects of kitchen procedures and guest service to ensure excellence in products.
Oversees all menus for breakfast, lunch and dinner
Monitors and supervises all Kitchen staff
Provides visionary leadership and management of the culinary research and development process from product creation through implementation.
Devise innovative product offerings for the restaurant and VC Signature Events.
Formulates and implements procedural guidelines, policies and standards pertaining to the restaurant, product specifications, cleanliness, sanitation, and cost control.
Monitors industry trends and collaborates with the kitchen management team.
Manages the overall menus, preparation instructions, menu cost, recipe development and individual dish specifications by ingredients and corresponding portion sizes, and plating style.
Guides and supports the Kitchen team in the implementation and adherence of kitchen 
Standards, processes & systems.
Monitors member feedback and takes corrective action as required, ensuring the highest level of member satisfaction.
Ensures the accurate maintenance of a menu and recipe database.
Oversees the monthly inventory count and trains the kitchen management team on inventory methods, procedures, and any changes to systems that are used to enhance the financial aspect of the culinary department.
Ensures that kitchen management are communicating with other department heads regarding their needs for events.
Responsible for ensuring the cleanliness and sanitation of work areas.
Performs all other duties as required


PARTICIPATING IN AND LEADING CULINARY TEAMS

Attends and contributes to a daily management briefing, as well as a daily restaurant pre-shift
Sets goals and delegates tasks to improve departmental performance.
Conducts monthly department meetings with the Kitchen team.
Applies and continually broadens knowledge of food and wine pairings and cutting edge cuisine with emphasis on current event trends.
Leads shifts and actively participates in the servicing of events.
Provides mentorship and leadership for the Kitchen team.

ENSURING AND PROVIDING EXCEPTIONAL CUSTOMER SERVICE 

Sets a positive example for The Food & Beverage and Kitchen Team.
Interacts with members to obtain feedback on product quality and service levels.
Responds to and handles member problems and complaints.
Responds to and handles all health and safety problems and complaints. 
Empower employees to provide excellent customer service.
Ensures employees understand expectations.
Strives to improve employee performance.
Emphasizes member satisfaction during all departmental meetings and focuses on continuous improvement.
Reviews member satisfaction results with employees.

CONDUCTING STAFF TRAINING ACTIVITIES 

Trains and develops the kitchen management team 
Communicates and executes departmental and property emergency procedures and ensures staff is trained in safety procedures.
Observes service behaviors of employees and provides feedback to individuals.
Monitors progress and leads performance discussions with staff.
Participates in the development and implementation of corrective action to address service challenges; focuses on continuous improvement of member satisfaction.
Attends and participates in all pertinent meetings.

QUALIFICATIONS & SKILL REQUIREMENTS:

Culinary Diploma or certification 
Must have 5+ years experience in high volume, fine-dining and/or a private members club environment, with at least 3 of those years in the capacity of sous chef or above
Excellent written and verbal communication skills
Leadership skills to motivate and develop team to ensure accomplishment of goals
Demonstrate superior customer service philosophy
Will be required to maintain a flexible work schedule including evenings, weekends and holidays.
Must be FoodSafe Certified
Hazard Analysis Critical Control Point certification beneficial
