Job Description

Position:         Line Cook - Garde Manger
Reports to:   Executive Chef, Marilena Cafe & Raw Bar

Come work with and learn from Victoria's own Executive Chef Kristian Eligh and celebrated Pastry Chef Dominique Laurencelle as they design seasonally focused menus that celebrate the global and locally sourced ingredients. Summary:
The Garde Manger Line Cook is responsible for the preparation and presentation of cold dishes including salads, appetizers, cold entrees, dressings, and charcuterie. This position plays a key role in maintaining food quality and consistency, ensuring all items are prepared to exacting standards in a timely manner.

Essential Duties and Responsibilities:

  • Prepare, assemble, and plate cold menu items including salads, pâtés, terrines, canapés, dressings, cold soups, and desserts
  • Measure and prepare ingredients, set up workstations so food can be prepared according to recipes
  • Maintain food safety and hygiene
  • Focus on quality, food preparation standards, and consistency in a premium kitchen environment
  • Meet production schedules and timelines
  • Communicate and coordinate with the team, including front-of-house

Required Experience and Qualifications:
  • 1–2 years of culinary experience in a professional kitchen, preferably in a garde manger or premium cold kitchen role
  • Enrollment in or completion of a culinary program
  • Food Safe Certification
  • Ability to stand for long periods of time, withstand heat, and deal with the pressures of preparing food in a fast-paced environment
  • Dedicated team player who naturally builds camaraderie
  • Extremely organized; keeping to deadlines and working with precision in a fast-paced environment
  • Responsible, motivated, and energetic self-starter
  • Excellent English language communication skills
