Key Responsibilities

• Ensures that sufficient mise-en place is prepared prior to service.
• Delegates tasks and provides direction to cooks and all food handlers.
• Ensures that all food items prepared adhere to high standards of the facility.
• Ensures cleanliness and sanitation is maintained in the various kitchen areas including refrigerators and storerooms to ensure high standards of freshness. Reports any concerns to the Sous Chef.
• Reports any irregularities, shortages or other related issues to the Sous Chef.
• Keeps all leftovers properly secured or use them according to the Sous Chef’s specifications.
• Keeps all the wastage recorded and to a minimum.
• Executes a backup role of Sous Chef as needed. Leads and trains staff in the absence of the Sous Chef.
• Provides courteous and professional service at all times.
• Checks the rotation of items for service to ensure high standards of freshness.
• Adheres to all food service, hospitality and culinary standards, policies, and regulations; including hygiene and cleanliness.
• Performs other duties as assigned.

What You Bring

• 2 to 5 years experience in a cook position or culinary experience
  
• Diploma or Certificate in Culinary Arts or comparable education 
  
• Supervisory experience is an asset
• Food Safe Level 1 (BC)
• Ability to lead by example
• Excellent communication (verbal and written) and interpersonal skills
• Excellent organizational and time management skills
• Ability to multi-task and work under pressure
• Ability to work within a team environment
• Excellent culinary skills and cooking abilities
• Solid knowledge of meat and starch preparation
• Experience with various knife-cutting techniques
• Solid understanding of food safety preparation including critical control temperatures
• Solid knowledge and ability to identify and prepare secondary sauces and basic soups
