Aburi Market Ambleside is seeking a skilled and detail-oriented Sushi Line Cook to support the daily operations of the sushi department. This role is responsible for preparing high-quality sushi and related items with precision and consistency while maintaining strict food safety and sanitation standards. The Sushi Line Cook works collaboratively with the team to ensure efficient production, proper ingredient handling, and an exceptional product presentation in a fast-paced retail and market environment.

Key Responsibilities

  • Prepare sushi items including rolls, basic sashimi, and nigiri according to established standards
  • Assist with fish filleting, prep, and portioning
  • Maintain cleanliness, organization, and proper food handling at the sushi station
  • Monitor product freshness, labeling, and rotation
  • Assist with inventory organization and ordering, or learn ordering procedures as required
  • Follow all food safety, sanitation, and hygiene standards
  • Support opening, service, and closing duties at the sushi station
  • Lift, move, and organize products and supplies up to 40 lbs
  • Stand for extended periods (6–8 hours) during shifts

Qualifications & Experience

  • Minimum 1-3 years of sushi experience
  • Experience with rolls, fish filleting, and some sashimi and nigiri preparation
  • Strong attention to detail and commitment to quality
  • Ability to assist with or learn ordering and inventory processes
  • Food Safe certification is an asset
  • Physical ability to lift up to 40 lbs and stand for 6–8 hours
  • BOH experience is preferred
