We are looking for an experienced Head Baker to lead our commissary operations.
In this role, you will oversee a team of production bakers, collaborate on recipe development, and manage overall production to keep Pallet cafés consistently supplied with pastries and baked good.

What You Will Do:
Production:
- Prepare, bake, and package sweet and savory baked goods.
- Supervise, train, and mentor a team of production bakers.
- Organize and oversee production schedules and team schedule.
- Ensure product consistency.
- Oversee ordering, inventory, and stock rotation.
Innovation & Menu Development:
- Develop, test, and refine baked goods and lunch menu items for large-scale production.
- Translate creative ideas into accurate, executable recipes.
- Collaborate with the Operations team to roll out new offerings.
- Provide ongoing training and support to café managers and kitchen teams across all Pallet locations.
- Maintain consistent quality standards for all products at all times.
Food Safety & Compliance
- Enforce food safety, sanitation, and quality control protocols.
Financial & Administrative Oversight
- Manage food costing.
- Maintain accurate records of recipes, production logs, and inventory.
- Oversee procurement, supplier relationships, and cost optimization.
What makes you a great fit:
- Experience: 2–5 years of professional baking (bread, viennoiseries, pastries) in a commissary, catering, or bakery setting with proven experience in recipe scaling, production optimization, and menu development, including 1–2 years in a supervisory or leadership role.
- Education: Diploma or degree in Baking & Pastry Arts, Culinary Arts, or a related field; Red Seal certification is an asset.
- Skills: Strong leadership, communication, and organizational abilities.
- Certification: FOODSAFE Level 1 or 2

With a goal to showcase a variety of coffees from talented producers around the world, our dedication to demonstrating quality, traceability and transparency within specialty coffee began.
Over the next 5 years, Pallet steadily grew into the household name it is today, now with 7 locations spanning across Metro Vancouver. Today, Pallet is a full service Roastery, cafe and restaurant operator, training provider and Wholesale partner to a number of businesses across Canada.
