Job Description

Koi, located at River Rock Casino, is building a high-end Japanese restaurant opening soon – and we're building our core team!

Right on the banks of the Fraser River, Koi offers breathtaking views of Vancouver and the North Shore Mountains. Picture golden hour light streaming through floor-to-ceiling windows — a peaceful, elegant setting by the water, designed for an elevated dining experience.

We are committed to delivering an authentic high-end Japanese dining experience at the highest Fine Dining standards. We source only the finest ingredients — premium seafood flown in fresh daily, A5-grade Japanese wagyu, and the best seasonal local produce. Every dish is crafted with precision and artistry, from our signature Aburi-style sushi to delicate sashimi and charcoal-grilled specialtie

Sushi Cook / Sushi Chef

We are currently building a passionate and professional culinary team and are looking for dedicated Sushi Cooks to join us.

Key Responsibilities

• Prepare sushi items including rolls, maki, oshi, and other menu offerings according to company standards

• Maintain a clean, organized, and efficient workstation throughout service

• Ensure proper food handling, product rotation, labeling, and freshness standards are followed

• Assist with inventory management, stock organization, and ordering procedures as required

• Follow all food safety, sanitation, and hygiene regulations

• Support daily opening, service, and closing procedures

• Work collaboratively with kitchen team members to deliver a high-quality guest experience

• Lift, move, and organize products and supplies up to 40 lbs

• Stand and work comfortably in a fast-paced environment during extended shifts

What We’re Looking For

• Minimum 1 year of sushi preparation experience

• Familiarity with rolls, maki, oshi, and basic sushi preparation techniques

• Strong attention to detail and commitment to quality and consistency

• Positive attitude and ability to work as part of a team

• Food Safe Certification is considered an asset

• Previous BOH experience is preferred
