Located in the heart of CIBC Square, we pride ourselves on our world-class dry-aging program, bespoke service standards, and one of the most comprehensive wine cellars in the country. We are seeking a passionate, knowledgeable, and disciplined Sommelier to join our hospitality leadership team.
The Role
As a Sommelier at Jacobs & Co., you are more than a wine expert; you are a storyteller and a guardian of the guest experience. You will work closely with our management team to maintain the integrity of our extensive wine list while providing seamless, intuitive service on the dining room floor.
Key Responsibilities
Floor Excellence: Provide expert tableside wine service, including decanting, proper glassware selection, and blind-tasting guidance when requested.
Curated Pairings: Develop and suggest sophisticated pairings for our diverse range of dry-aged steaks, spanning various regions and aging processes.
Cellar Management: Assist in the organization, inventory management, and proper storage of a multi-million dollar wine collection.
Staff Mentorship: Conduct regular training sessions and modular tastings for server assistants and servers to elevate the collective wine knowledge of the team.
Sales Strategy: Drive wine sales by understanding guest preferences and navigating our list to find selections that exceed expectations at every price point.
Standards Maintenance: Uphold the strict professional standards of Jacobs & Co., including meticulous attention to uniform, punctuality, and a fragrance-free service environment.
Qualifications & Requirements
Certification: Minimum of Certified Sommelier (CMS) or WSET Level 3; Advanced Sommelier or Diploma level is highly preferred.
Experience: At least 3–5 years of experience in a high-volume, fine-dining environment or a recognized premier steakhouse.
Technical Knowledge: Deep understanding of global viticulture, oenology, and spirits, with a specific emphasis on California Cabernets, Bordeaux, and Piedmont.
Hospitality Mindset: A refined approach to service that balances technical expertise with approachable, warm hospitality.
Physical Stamina: Ability to remain on your feet for long shifts and safely navigate a busy dining room and cellar environment.
Professionalism: Exceptional communication skills and a commitment to maintaining a disciplined, high-performance workplace culture.
