Job Description

The Role:
Chef de Cuisine is one of our senior restaurant leadership roles. The Chef de Cuisine will approach running the business with the same pride as if it were their own; with passion, drive and an entrepreneurial spirit that will inspire their team to perform at its very best. They are responsible for both the training and development of the team as well as ensuring guest satisfaction by producing a consistent and high-quality product. They will work closely and partner with the Executive Chef to create a fun, safe, and challenging work environment that our team members will want to grow with.

Your Responsibilities:
Manage Daily Kitchen Operations
Ensure that all product is being prepared consistently to Gusto 54 standards
Maintain up to date recipes for all menu items, ensure recipes are used at the time of preparation
Oversee BOH Equipment Maintenance & Preventative MaintenanceFollowing and enforcing all kitchen policies and proceduresHands-on approach to filling orders and training
Maintain pristine Back of House (2 floors)
Controlling Profit and Loss
Reviewing and evaluating supplier pricing
Maintaining optimal labour percentages; oversee BOH scheduling, avoiding overtime
Maintain optimal Food Cost
Ensure par ordering levels are maintained and all incoming stock is checked
Oversee Inventory Reports and address any variance
Meets established targets on COGS
Hiring and Retaining Awesome Staff
Hiring and Training top talent for all BOH positions
Follow onboarding procedures, setting up new employees for success
Ongoing Training & Development of employees
Foster an environment for happy people making people happy
Develop Sous Chefs to become our future leaders
Evaluates and Collaborates on Menu development
Work alongside Executive Chef for seasonal menu changes & Catering Chef on custom menu requests for events, weddings, etc.
Coordinate with Gusto 54 Head Office on any systems & processes roll-outs
Maintain Safe WorkplaceEnsure BOH representation in Health & Safety Meetings
Ensures Safe Food Handling in being enforced
Manages in compliance with harassment and workplace violence policy 

Requirements:
Exceptional leadership and communication skills
Minimum 5-years culinary management experience in a high volume environment
Excellent knowledge of food safety standards
Valid Food Handler’s Certificate
An organized approach to a Chef's routine for maximum impact
Knowledge of Italian Cuisine an Asset
