The Position:

Our Club is in need of full-time Chefs de Partie to join our team. Reporting to the Executive Chef and Sous Chef, this important position is responsible for providing exceptional meals to the members and guests in the Club’s restaurants, as well as during special events; this role will require work on the service line, preparation work, and (subject to the return of events) banquet preparation. Open positions are for full-time, with required availability in the evenings and on weekends and holidays.

In the current climate, Shaughnessy has worked to enact additional safety precautions for staff and members to mitigate the risks of contracting COVID-19. In step with these initiatives, kitchen team members are required to wear a mask while on shift.

- Minimum 4-5 years cooking experience in a luxury food program or fast-paced restaurant

- Red Seal Certificate (Journeyman’s papers) or recognized international equivalent

- Certified in FoodSafe Level 1

- Legally entitled to work in Canada


Responsibilities:

- Consistently preparing culinary items according to recipes, and demonstrate thorough knowledge of food preparation, presentation and service techniques

- Maintaining strict adherence to FoodSafe regulations

- Ensuring cleanliness of all kitchen and prep areas

- Monitoring portion controls, food quality, inventories, proper food storage, and food freshness under the direction of the Executive Chef

- Reviewing daily production sheets with the Sous Chef and prepare the food items in accordance with Shaughnessy standards in an efficient manner

- Keeping overproduction and food waste to a minimum, while ensuring proper rotation, labeling, and food storage

- Operating kitchen equipment while adhering to safety procedures, and reporting any deficiencies

- Ensuring all food products are handled, stored, prepared and served safely and in accordance with food safety guidelines

- Learning, knowing and staying up-to-date on our health and safety, COVID-19 protocols, and Club protocols and rules

- Various side duties as assigned
